Can anyone out there tell me if it is possible to use one EDIS6 module to fire two coil packs or how to wire two EDIS6 modules to run dual-plugs on a 6 cyclinder engine?

This has been discussed before. The previous consensus was that using two EDIS modules would require two MJLJs as well, which is not practical.
So, that leaves trying to drive two coil packs at the same time. Two coil packs will double the load on the driver circuit in the EDIS. Only experimentation will show if it will be overloaded and burn out, to the best of my knowledge, no one has tried this to date. If the EDIS does blow, then a simple circuit to have the EDIS trigger a high power transistor that is rated for the current, as well as the flyback voltage is required.

Why would you need two
Why would you need two Megajolts? I would try connecting EDIS inputs (the VR signal and the SAW signal) together and I would just pick the PIP signal from one EDIS to go into the Megajolt.

It’s entirely possible that two EDIS would run off a single MJLJ. The potential issues are that the VR sensor signal would not support two modules, and that dual wiring could cause ground loops and other weird feedback.

Of course! However, the number of people that own dual plug cars and want to run a custom timing curve is rather small. But after you run some successful tests, that number could suddenly increase 
I only have experience with some of the older Nissan dual plug engines, but as I recall, under certain engine conditions, both plugs would not fire at exactly the same time, and at max load, one plug would shut off completely. Whether this was done solely for emissions, or to prevent the connecting rod bearing from relocating to the bottom of the oil pan, I do not know.
