I'm considering a race capture pro but the lack of a display for it (other than tablets/phones) is a tad of a limitation.
What would it take to get a sim racing display (plenty available out there) to work with race capture?

With CAN BUS support and output now possible I think this opens up the option of using dash displays that also support CAN. Hopefully brentp can confirm.
Personally I'm going to give a tablet a shot as a display in a few months before deciding on whether I want a full fledged dash display from another vendor. For me $200 for an 8" tablet plus a little bit more for a fabbed mount using a cheap $10 case off amazon as the core is worth trying out before something much more expensive like the stack/aem/motec units (which also would be redundant to the rcpro's datalogging).

Arduino already has a CAN shield, plus display support, just need to put those two together!

Theoretically, if it runs Android, couldn't we just install the RC App from the Google Play Store and just run it from there???? Or maybe this is basically just the NVIDIA Shield tablet design....

It works reasonably well. The one gotcha with any of these is bluetooth (if that's how you're connecting to the RCP).
A lot of them will just have a bluetooth chip wired up to the audio system so you can pair your phone, but that BT radio isn't accessible from Android, so you won't be able to pair it with the RCP. The Joying unit I tried was like that. The Carpad actually has two BT radios, one for pairing phones, one for connecting to other devices. As a general rule, if you can make Torque work *with a bluetooth OBD dongle*, you'll be fine. I've often wished I could just use USB and be done with it, but that's not supported (that I can tell) on the Android app.

has no Data Transfer Services just only has the Bluetooth for pairing with mobile and use for Dial, Answer, Stop Call, Music, Phonebook, Call records.
Maybe the better question to ask is does it support screen mirroring? Because then it's just a bigger display which can be permanently mounted.
