From MAP to TPS

could I just purchase the TPS components and de-solder the MAP pieces from the board?

Yep. The hands-down easiest way to do it is to simply snip or desolder the 270 ohm resistor for the MAP sensor, which leaves you with the option of easily re-enabling the MAP option in the future..

can the resistor at R3 in the TPS option section also be snipped to go back to MAP?

Yes, that would work. Or you could just disconnect the tps input on the molex connector (or unplug the TPS unit).
